4-Hydroxy-5-methyl-3-furanone, also known as methyl furanone, is a kind of furanone essence product. It is a white or light yellow solid at room temperature, with a strong caramel aroma, as well as toast, fruit flavor and jam flavor. The flavor intensity is slightly weaker than furanone, but the performance is stable and the price is lower than furanone.

4-Hydroxy-5-methyl-3-furanone is an important raw material of sweet essence and a good flavor enhancer. When the flavor threshold value is 0.04ppb, it has obvious flavor enhancement and modification effect.
