Tween has high hydrophilic properties and HLB value, and belongs to the O/W type emulsifier. Its surface activity is not affected by the environmental pH, and at a very low concentration (0.05%), the interfacial tension of the soybean oil/water system can be greatly reduced. Tween itself is water-soluble, and has a good effect on oleophilic substances that are difficult to dissolve in water, and can be used to prepare emulsified essence. It also has good aeration and stirring foaming effect in food. It has a good stabilizing effect on certain oil crystals.
