Sodium isascorbate is white to yellow-white crystal particles or crystal powder, odorless, slightly salty, melting point above 200ºC decomposition, in the dry state exposed to air is quite stable. However, in an aqueous solution, when there is air, metal, heat, and light, oxidation occurs, it is easily soluble in water 55g/100ml, almost insoluble in ethanol, and the PH value of 2% aqueous solution is 6.5-8.0.
