Properties:

D-isoascorbic acid is a kind of natural, green and efficient food antioxidant, which plays a considerable role in improving the stability of food and extending the storage period. As an isomer of Vc, D-isascorbic acid has many similarities with Vc in its chemical properties, but as an antioxidant, it has some advantages that Vc does not have. First of all, its antioxidant activity is better than Vc, so when used with Vc, it can effectively protect the medicinal components of Vc, and has a good effect in improving the medicinal properties, while protecting the color of Vc. Second, the safety is high, there is no residue in the human body, and the human body participates in metabolism after ingestion, which can be partially converted into Vc. D-Isoascorbic acid is a stereoisomer of vitamin C and is therefore chemically similar to vitamin C. D-Isoascorbic acid is white to light yellow crystal or crystal powder, odorless, sour taste, melting point 166~172 ºC, and decomposition, gradually black in the light. In the dry state, it is quite stable in the air, while it deteriorates rapidly when exposed to the atmosphere in solution. It has almost no physiological activity of ascorbic acid, and its antioxidant performance is better than that of ascorbic acid, but its heat resistance is poor, its reducibility is strong, heavy metal ions can promote its decomposition. Isoascorbic acid is highly soluble in water, 40g/100ml, soluble in ethanol, 5g/100ml. Insoluble in glycerol, insoluble in ethanol and benzene, the PH of 1% aqueous solution is 2.8.
