Chemical Property/Description:

 

Appearance: Colorless or white crystalline powder, containing 1 molecule of crystalline water.
Solubility: soluble in water (1080 g/L, 20 ºC), slightly soluble in alcohol, insoluble in ether.
Melting point: 130 ºC (decomposition).

Chemical characteristics
Reductive: Contains free aldehyde groups, can undergo silver mirror reaction, and react with Bans reagent to form brick red cuprous oxide precipitate.
Hydrolysis: Under the action of dilute acid or alpha glucosidase, it hydrolyzes into two molecules of glucose.
Stability: Strong thermal stability, better antibacterial ability than sucrose (40% concentration can inhibit bacteria).
 

Main Uses:

 1. Food industry
Sweetener and improver
The sweetness is 30% of sucrose, used in candies and baked goods to provide a mild and long-lasting sweetness, improve taste and moisturizing properties.
Inhibit vitamin C oxidation and delay food browning.
Functional additives
As a precursor of prebiotics, it is used for the production of oligosaccharides and promotes the growth of intestinal probiotics.

 2. Research and Biotechnology
Microbial culture: used as a carbon source for the preparation of culture media for fungi (such as white ring mushrooms) and Escherichia coli.
Enzyme activity detection: used as a substrate for detecting enzymes such as alpha amylase and invertase.

Pharmaceutical excipients: used as stabilizers or flavoring agents in formulations.
