Sodium citrate is non-toxic, has pH regulation properties and good stability, so it can be used in the food industry. Sodium citrate is used as food additive, the demand is the largest, mainly used as flavoring agent, buffer, emulsifier, expansion agent, stabilizer and preservative, etc. In addition, sodium citrate is used with citric acid as a gelling agent, nutritional supplement and flavor agent for various jams, jellies, fruit juices, beverages, cold drinks, dairy products and pastries.


Sodium citrate is the most important citrate at present, mainly by the fermentation of starch substances to produce citric acid, and then neutralized with alkali substances, with the following excellent properties:
(1) safety and non-toxic performance. Because the raw materials for the preparation of sodium citrate are basically from food, it is absolutely safe and reliable, and will not cause harm to human health. The Food and Agriculture of the United Nations and the World Health Organization do not make any restrictions on its daily intake, which can be considered to be drug-free.
(2) It is biodegradable. Sodium citrate is diluted by a large amount of water in nature, and part of it becomes citric acid, and the two coexist in the same system. Citric acid is easily biodegraded by oxygen, heat, light, bacteria and microorganisms in water. Its  decomposition pathway is generally through aconite acid, itaconic acid, citriconic acid , into carbon dioxide and water.
(3) Has the ability of metal ion complexation. Sodium citrate has good complexation ability for Ca2+, Mg2+ and other metal ions, and also has good complexation ability for other metal ions, such as Fe2+ plasma.
(4) Excellent solubility, and solubility increases with the increase of water temperature.
(5) It has good pH adjustment and buffering performance. Sodium citrate is a weak acid and strong base salt, which can be combined with citric acid to form a strong pH buffer, so it is important in some occasions that are not suitable for a wide range of pH changes. In addition, sodium citrate also has excellent retarding properties and stability.


As a Ph regulator and emulsifier, used in jam, candy, jelly and ice cream, etc. The combination with citric acid has the effect of alleviating sour taste; There is also the role of complexing metal ions. China's provisions can be used for all kinds of food, according to the production needs of appropriate use.


 

Used as food additive, complexing agent and buffer for electroplating industry, pharmaceutical industry for the manufacture of anticoagulant, light industry for detergent additives.

 

It is used as seasoning and stabilizer for food processing, buffer and auxiliary complexing agent in non-toxic electroplating industry, anticoagulant, expectorant and diuretic drug in pharmaceutical industry, and also used in brewing, injection and shadow medicine.
